I have no idea where I got this from. It could have been from a magazine or the internet. I have always hated meatloaf, but once I tried this recipe though I was hooked! Not to say I'd eat just any meatloaf but I love this recipe.
Little Meatloaves
preheat oven to 350 degrees
1 lb. lean chuck
1 egg
3/4 cup milk
1 cup shredded cheddar (this doesn't affect the taste of the dish)
1/2 cup oats
1/2 cup chopped onion
1 teaspoon salt
Topping
2/3 cup ketchup
1/2 cup brown sugar
1 teaspoon prepared mustard
Beat egg and milk. Stir in cheese, oats, onion and salt. Add beef, mixing well until combined. Shape into aproximately 8 little meat loaves and place into a prepared (with Pam) 9"x13" pan. Combine the topping ingredients, mixing well until no longer granular. Spread topping evenly over loaves, using all the topping. Bake uncovered at 350 for 45 minutes or until meat is no longer pink inside.
